I am about to fly abroad and want to know if I can pack some banana muffins baked with kedushat shevi'it bananas.

The laws of kedushat shevi'it apply to any products with kedushat shevi'it. This includes the laws of hefsed, bi'ur, and taking the food outside of Israel.

However, most posekim hold that in extenuating circumstances (such as when you don't have other food) it is possible to bring shemitah food for the way. This is providing that this is a small quantity and will be eaten before bi'ur time. Note that Rav Mordechai Eliahu forbids this.
