How do I know which ma'aser year my fruit belongs to?

Hello, I just signed up for the Beit HaOtzar . I have the following trees in our garden and Im not sure of when to say a bracha and when not to on the separation of Terumot and Maaserot: Lemons ( seem to have fruit on the tree most of the year) Pomelos Grapefruit Olive Leeche ( has flowers in Nissan and starts to show signs of tiny fruits in Iyar) Mango (same as the Leeche) Oranges - ripen late winter. Filtered wine for which bi’ur ma’aserot was not performed before the end of Pesach 5786

I prepared wine from a private harvest of 5785—about 75 liters. After pressing, I transferred the wine into large demijohns. At the beginning of Adar, I performed the first racking (filtering). A second racking is planned for the end of Iyar. I did not separate terumot and ma’aserot, as I intended to do so after the second racking.

Unfortunately, I forgot that this year it is obligatory to perform bi’ur ma’aserot by the eve of the seventh day of Pesach. I also forgot to perform bi’ur on the coins I had designated for redeeming ma’aser sheni.

My question: What should I do now? If I open the wine now, it may spoil. Is it possible to separate terumot and ma’aserot and perform bi’ur after the second racking? Also, what should I do with the coins?

I would appreciate your guidance.

Am I supposed to wet produce before separating terumot and ma'aserot?

I am a member of your keren and I often separate fruit from my garden. 
I recently heard that I should make the fruit tamei before separating because otherwise I can't redeem the ma'aser sheni for a token amount (rather I would have to redeem it for its full value). Is that correct? If so, is this requirement  bedi'avad or just lechatchila? 
The fruit that I pick is usually not yet tamei because it hasn't been washed before I separate it. It's easy for me to make it tamei if I need to, but I wasn't aware that this was required.

We just moved to a new house with a lemon tree and wanted to separate terumot and ma'aserot from the ripe lemons on the tree. We are members of Beit Ha'otzar. My husband and I each picked a lemon, and recited the regular text for separating terumot and ma'aserot. Now what?  

Is there a minimum quantity of harvest that requires terumot and ma'aserot?

I have a basil plant growing in my yard outside. Since it's a herb, does it require a berachah?  Also, I generally pick a few leaves each time. Is there a minimum amount of leaves that requires terumot and ma'aserot? 

Separating terumot and ma'aserot at an agricultural school using private membership

I have a subscription with Beit Ha'otzar. At the school where I work, I am responsible for the agriculture program. We grow vegetable patches. Since all the vegetables at the school are under my responsibility, I am also the one who separates terumot and ma’aserot from them.
Is there any issue with separating terumot and ma'aserot using my personal subscription with Beit Ha'otzar?

Bi'ur ma'aserot questions: I didn't realize I needed to destroy the coin! How do I know when a coin is "full"? What then?

 I first learned about separating terumot and ma'aserot in yeshiva in 2015. In either 2015 or 2016 I designated a half shekel coin to redeem the kedushah onto. At that point in time, I didn't know about bi'ur ma'aser needing to be done at specific times every 4th and 7th year.

I've had the same coin for 9 or 10 years and have periodically used it to redeem produce. I did not do bi'ur ma'aser on it yet but will destroy it before Pesach of this year.

How do I know when the coin is “full” and I need to replace it?

How many times can I redeem produce onto it?

If I “fill up” one coin before the designated time to do bi'ur ma'aser, should I destroy the coin and start a new one or do I have to keep the “full” coin until the 4th or 7th year and only them destroy it?

If I keep the full coin until the year in which I need to destroy it, is there some special procedure when I start the new coin?

Do I need to transfer the kedushah from the full coin to the new coin? Thanks

Ma'aser for kumquats and lemons harvested after Tu Bishevat 5786

Fully ripe lemons that are growing on my tree now in Israel - are they ma'aser ani or ma'aser sheni? Presumably they grew more than a 1/3 prior to this most recent Tu Bishevat. Same question about my kumquats - they are smaller and unclear when they grew, but certainly most likely more than 1/3 prior to Tu Bishevat.
